It’s barbecue season, and I’ve been raving about this barbecue rub that comes courtesy of Jamie Oliver.

I tried it rubbed into chicken a couple of days ago and it’s beautiful – smoky, sweet and fragrant. It’s also incredibly easy to make.

Here’s what you need:

1 tablespoon Fennel Seeds

2 teaspoons Smoked Paprika

Zest of one orange

1 teaspoon Dried Thyme

1 tablespoon Brown Sugar

2 cloves of garlic, peeled and finely grated

Salt and black pepper.

Basically, crush your fennel seeds and black pepper in a pestle and mortar, mix it with the rest (and some oil if you want) and then rub it on your pork, chicken or beef. Put it on a griddle pan or a hot grill for a few minutes and it will blow you away. Try it and see if you don’t believe me.
